Yet, ARIARI GROWERS  is more than just cacao; it is a story of community. Our farm is powered by the youth of El Castillo, Meta—a region with a deep-rooted cacao heritage. Furthermore, a significant part of our team is comprised of female heads of household, who are responsible for the meticulous hand-selection of our beans, ensuring that only the finest quality reaches the global market

Storage: Preserving Cacao Excellence Once fully processed, the cacao beans are stored in natural fiber bags with hermetic liners on wooden pallets, preventing moisture absorption and safeguarding their flavor integrity. Every batch is weighed, labeled, and logged to ensure full traceability, allowing buyers to track its exact origin and detailed processing history.

Harvest & Selection: Only the Finest Beans The journey begins in the lush fields of El Castillo, Meta, where our skilled farmers meticulously hand-pick only the most mature cacao pods. Our process centers on a manual harvest, selecting pods exclusively at their peak ripeness. Subsequently, the beans are categorized by genetic variety—ICS-1, FSV-41, and FEAR-5—to maintain purity and secure the most refined flavor profile for our fine aroma cacao Drying: Enhancing Cacao’s Natural Aroma Drying is crucial for intensifying the sensory profile of our cacao. We adhere to a daily turning protocol, gradually reducing the moisture content to 7-8%, which ensures optimal storage conditions. This meticulous process guarantees a fine aroma cacao with stable organoleptic properties and long-lasting quality Fermentation: Where Cacao Develops Its Personality Fermentation is essential for enhancing the flavor and aroma profile of our cacao. The selected beans are placed in wooden fermentation crates, covered with banana leaves to maintain the ideal temperature. The first turn takes place at the 48-hour mark, followed by cut tests starting on the fourth day to monitor the process and determine the perfect moment to transition to drying Collection & Pod Breaking: Ensuring Organization and Traceability To uphold our premium quality standards, pods are meticulously sorted by sanitary condition, isolating healthy fruit from any affected ones. We utilize a specialized guillotine for bean extraction, ensuring a precise process that prevents any damage to the seeds. The remaining cacao husks are upcycled into compost, further solidifying our dedication to sustainable and regenerative farming practices.
